Our view in brief

A professional dough box becomes much less appealing when the fridge door no longer closes. Before counting dough balls, measure the width, depth and, above all, the actual clearance in front of the shelf. The lid and any handles are part of those dimensions.

For a domestic fridge, I would start with sizes close to 40 × 30 cm. The ZiiPa Minola is designed as a simple set, with an integrated lid and a stated capacity of up to six 250 g dough balls. The compact 9-litre Gilac uses almost the same surface area but takes a more utilitarian approach: the manufacturer describes a smooth, flat base, high-density polyethylene and French manufacture.

The HENDI GN 1/1 becomes interesting if a width of 53 cm genuinely fits in the fridge. It is shallow and stackable, but its lid is sold separately. The 15-litre 60 × 40 cm Gilac already belongs to a different setup: a dedicated fridge, a large table or a substantial batch. Its broad surface is no benefit if it takes over an entire shelf.

There is therefore no best box independent of the kitchen. For four to six pizzas in a family fridge, 40 × 30 cm seems the most reasonable starting point. The GN 1/1 and 60 × 40 cm formats only become better when the space, number of dough balls and working method justify them.

Four sizes that do not ask for the same fridge

The dimensions are those stated by the manufacturers. The number of dough balls is never an absolute gauge: different recipes, weights and proofing times do not occupy the same space.

An external dimension tells you what must fit in the fridge. The internal area tells you what remains for the dough. HENDI is the only one of the four to publish both sets of measurements: 53 × 32.5 × 9 cm outside, then 48 × 28 × 8.5 cm inside. That difference is enough to show that an advertised size is never the entire usable surface.

Start with a tape measure and the door open

Measuring the shelf at the back of the fridge is not enough. The box must also clear the door, avoid a door rack and remain easy to grip without tilting the dough balls. A box 40 cm deep may theoretically fit on a shelf and still be awkward to remove if the door does not open far enough.

I would measure three things: the width of the opening, the depth to the back, and the available height once the lid is fitted. I would then leave some margin for fingers and normal cold-air circulation, in line with the fridge’s instructions. A cardboard template in the dimensions of the box can reveal a problem before purchase.

This check often gives a clearer answer than comparing capacities. If the 60 × 40 cm box cannot pass through the door, its 15 litres and professional base are irrelevant. If the GN 1/1 blocks the bottles in the door, 40 × 30 cm becomes the most efficient format again, even if that means using two boxes.

ZiiPa Minola: the easiest to understand

The Minola product page states dimensions of 40.5 × 30 × 8.5 cm, a polypropylene body and an integrated airtight lid. ZiiPa presents it for a maximum of six 250 g dough balls and says it is dishwasher-safe.

The proposition is easy to read: one box, its lid, one family batch. I would choose it if the dough balls are close to the stated weight and the dimensions fit in the fridge without contortions. I would not take the number six as a promise for every recipe. Dough needs room to develop, and the weight of each ball changes the calculation immediately.

The integrated lid mainly avoids ordering an incompatible part or searching for it at the last minute. Its stated airtightness does not remove the need to follow the temperature and timings in the recipe.

Gilac 9 litres: the more utilitarian 40 × 30 cm box

Gilac gives the compact box with lid dimensions of 40 × 30 × 10 cm, a volume of 9 litres and a weight of 1.05 kg. The manufacturer states food-contact high-density polyethylene, a flat, smooth base, French manufacture and an average capacity of six to nine dough balls.

I would consider it for a kitchen where the box is used often and needs to be a work tool rather than an accessory matched to the oven. Its ten-centimetre height offers different headroom from the ZiiPa’s 8.5 cm, but also takes more space beneath the shelf. The empty weight matters if the full box must be lifted out with one hand.

Gilac’s “six to nine” remains a stated average, not a guarantee. Before aiming for nine pizzas, check the weight, spacing and expected increase in dough volume. Two less crowded boxes may make the bake much calmer than one filled to its maximum.

HENDI GN 1/1: wide, shallow and incomplete without its lid

The HENDI box, reference 880975 measures 53 × 32.5 × 9 cm outside. The manufacturer states internal dimensions of 48 × 28 × 8.5 cm, BPA-free high-density polyethylene, an operating range of -40 to 90°C and stackability.

Its shallow size can be practical in a wide fridge or a setup already built around GN 1/1. It offers more length than 40 × 30 cm without growing very tall. However, the official page is clear: lid 880982 is ordered separately. The checked Amazon offer covers the box, so inspect the complete basket before confirming the purchase.

I would rule it out for a family fridge without testing a template. The 53 cm cannot be reduced to the internal width stated by the fridge manufacturer: the door, its storage and your grip can all reduce the usable clearance.

Gilac 15 litres: a professional size you must account for

The 15-litre Gilac measures 60 × 40 × 9 cm, weighs 1.27 kg and has a stated internal base of 55.5 × 35.5 × 8 cm. Gilac publishes a high-density polyethylene body, flat and smooth base, and French manufacture. The checked Amazon.fr offer includes a lid.

This size makes sense for a large batch or cold storage reserved for dough. It spreads the dough balls across one broad surface and matches a common standard for professional equipment. At home, its footprint may remove all the flexibility you wanted: there may be no way to move a bottle, store tomorrow’s meal or simply clear the door.

I would therefore not choose it “for peace of mind”. I would choose it after confirming its exact position, its journey to the worktop and how it will be washed. A 60 cm box that fits in cold storage but not in the sink or dishwasher remains an object to manage.

Organise the bake without filling the box to its limit

The right box should remove steps, not add them. Dough balls can be arranged in a simple order, with enough space for the recipe, and then removed without rearranging the whole kitchen. If two dough styles or two removal times are planned, two labelled boxes are better than one large mixture.

The lid protects the dough surface and enables a cleaner setup. It corrects neither excessive fermentation nor a poorly chosen temperature. Follow the recipe and your chosen storage rules, then use the box to make the protocol clear: time into the fridge, time out and order into the oven.

For four to six pizzas, I would stay with 40 × 30 cm as long as everything fits without crowding. Beyond that, I would first consider two stackable boxes, then a wider format if the fridge genuinely accepts it. This progression uses less space day to day than a professional box bought for two large evenings a year.

Once the dough balls are out, the infrared thermometer takes over: the box organises the dough; it does not tell you whether the oven floor is ready.

The model I would choose for each batch

The ZiiPa is the clearest choice for a first domestic box with an integrated lid. The compact Gilac better suits a standardised-equipment approach. The HENDI is for a wide shelf and someone willing to buy its lid separately. The 60 × 40 cm Gilac begins where the family kitchen ends: large preparation volume and dedicated space.

I would avoid choosing on the stated number of dough balls alone. I would prefer a slightly less crowded box that is easy to lift out and set near the oven. When the evening arrives, useful capacity is the one that lets you take one dough ball without it sticking to the next or moving the entire fridge.

What the product pages cannot settle

We have not compared these four boxes with the same dough and protocol. The manufacturers describe dimensions, materials and some capacities, but publish no comparison of actual sealing, ease of releasing a dough ball, or resistance after repeated refrigeration and dishwasher cycles.

Useful capacity also depends on the recipe, weight, time and temperature. That is why our conclusion starts with fridge compatibility and batch organisation. For the dough itself, the box does not replace a suitable fermentation protocol.
