Our view in brief

The oven looks ready. The flame is strong, the display has reached its target and the dough balls are waiting. The stone may still tell a different story. An infrared thermometer becomes genuinely useful for that one question: “is the oven floor ready here?”

For an Ooni oven with a cordierite floor, the Ooni Digital Infrared Thermometer is the most direct choice: the manufacturer says that it is calibrated for its stones, and the display keeps things simple. The Bosch UniversalTemp is a better fit when the same device must also work around the home or workshop, with three material settings rather than an emissivity value to enter to one decimal place.

The ThermoPro TP30 and Tilswall W301 provide more control over emissivity. That is interesting if you measure several surfaces, less so if you only want to point at the stone and read a number. The Tilswall version found on Amazon.fr adds a separate food probe; it can then measure two different things, but the infrared sensor still does not become a core probe.

I would not choose on the maximum temperature printed in large type. All four models already cover the temperatures commonly advertised for pizza-oven floors. I would first look at how easy the settings are, the relationship between distance and the size of the measured area, then how the device fits into the routine between two pizzas.

Four devices, four ways to retain a reference point

The values below are those published by the manufacturers. They compare functions; without a shared measurement, they do not establish that one device is more accurate than another.

A 10:1 or 12:1 ratio is not a score. It links the measuring distance to the diameter of the area actually read. The farther away you stand, the larger the area the device averages. To find a precise point on the floor, stay at a reasonable distance and use roughly the same position for each reading.

The oven-floor temperature is not the oven temperature

An infrared thermometer reads radiation from a surface. It does not directly measure the air in the chamber, the temperature at the centre of the dough, or the topping. That is exactly what makes it relevant here: the dough touches the stone, not the oven display.

Yet one reading at the centre says little. A side burner, a flame at the rear, or a pizza just removed can create very different zones. A simple routine is to aim at the centre, then the rear and front of the area where the next pizza will be launched. The highest number is not necessarily the most useful; the distribution, and how it changes between bakes, says more.

The target then depends on the oven, dough and pizza style. The thermometer does not decide that target. The oven manual or a sufficiently precise recipe must provide it, and the readings help you find it again from one batch to the next. In other words, this tool is better at repeating a method than collecting records.

Ooni: coherent if an Ooni stone is your only surface

The Ooni thermometer product page states a range of -30 to 550°C, a 10:1 targeting ratio and a response time below 300 milliseconds. The device can display an instant value, or the minimum, maximum or average during a scan. Its emissivity remains adjustable, even though Ooni primarily highlights its calibration for the stones in its ovens.

This is the model I would consider to reduce questions at launch time: one brand, its floor and a tool made for it. That coherence does not prove that it will be more accurate on another brand’s stone or on a metal plate. It simply avoids paying for functions that may never be used.

Bosch: the simple choice for several uses

Bosch explicitly includes pizza stones among the surfaces for the UniversalTemp. Its range ends at 500°C and its distance-to-spot ratio is 12:1. It offers a single measurement, continuous scanning and three material groups.

Those three groups are both its strength and its limitation. They make the choice easier to understand than unrestricted emissivity, especially for a device that will move between the kitchen, heating system and workshop. They offer less granularity if you already know how to set the device precisely for each surface. For one oven floor and a few household checks, it is an easy compromise to defend.

ThermoPro: more settings, provided you use them

The ThermoPro TP30 states a range of -50 to 550°C, a 12:1 targeting ratio and adjustable emissivity from 0.1 to 1.0. It also retains the minimum, maximum and average values during a scan.

I would choose it for someone who wants to compare a stone, steel plate, pan or other surfaces and is willing to check the correct setting. Adjustable emissivity does not magically improve every measurement: a poorly chosen value can instead make the result less useful. For a single stone always measured in the same way, the gain over a simpler interface may remain theoretical.

Tilswall: relevant if you will genuinely use the separate probe

The Tilswall W301 extends its stated range to 600°C, with a 12:1 ratio, emissivity from 0.1 to 1.0 and threshold alarms. The Amazon.fr offer checked on 30 August 2026 also includes a contact food probe.

That combination makes sense if you want to read the stone with infrared and separately check the interior of thicker food. It is unnecessary if pizza is the only planned use. Above all, resist the shortcut: the infrared gun remains a surface device; only the separate probe enters the food.

A routine is more useful than one isolated number

Before the first pizza, choose three areas on the floor that are easy to find again. Read them from a similar distance, without aiming through dense smoke or bringing your hand close to the opening. Then compare the same areas after each bake.

This small discipline answers three practical questions: has the launch area reached the target for your recipe? Is one side markedly hotter? Has the floor recovered before the next pizza? It also helps distinguish an oven that is genuinely ready from a burner that has simply reached full flame.

Once the area is ready, a peel that fits the opening lets you launch without improvising the final movement.

The laser pointer shows the direction of aim; it does not measure. Never direct it towards anyone’s eyes. Shiny, reflective surfaces also require more care than matt cordierite; follow the device manual to select a suitable setting.

The model I would choose for each kitchen

For an Ooni stone and a deliberately short routine, I would take the Ooni. For a device shared between the stone and other checks around the home, the Bosch seems more approachable. I would keep the ThermoPro for someone who genuinely wants to set emissivity, and the Tilswall for someone who will also use its separate probe.

I would reject any device whose range stops below the oven’s target temperature, but I would not buy 600°C merely because 600 is higher than 550. Display legibility, available batteries and the ability to repeat the same measurement in the same place will matter more during an evening.

What the product pages cannot settle

We have not tried these four thermometers. The manufacturers publish tolerances and response times, but not one shared independent protocol on the same stone, at the same temperatures and distances. It would therefore be misleading to derive an accuracy ranking from them.

The pages also do not document performance after months beside an oven, legibility in direct sunlight, or behaviour after a fall. Our choice concerns the fit between the stated controls and a use. If certified measurement or metrological traceability is essential, this consumer information is not enough.
