The short answer: measure the oven before looking at the brand
If you only want to buy one peel, I would start with a 30 cm aluminium peel, either solid or perforated, provided it passes through the oven opening with a comfortable margin. The solid version is the easiest to understand. The perforated version lets some flour fall away before launching. Bamboo is pleasant for preparation and serving, but it is not the tool I would choose for working close to a flame.
No peel is therefore best in absolute terms. It either suits or does not suit a pizza diameter, an oven opening and a particular movement. That is one of the details I like about making pizza: the most impressive tool is not necessarily the one that makes the movement cleanest.

The four models we would keep in the comparison
| Model | The use that gives it a purpose | What to watch |
|---|---|---|
| Ooni perforated 30 cm | Launching while letting some flour fall away | Hand-wash only and a width limited to pizzas close to 30 cm |
| Ooni classic 30.5 cm | Learning with a versatile solid peel | It carries more of the flour left under the dough |
| Ooni bamboo 30 cm | Preparing, launching and then serving on the same board | Thicker and less suitable for working inside a hot oven |
| Weber 6691 | Storing a stainless-steel peel easily after baking | A solid 31.5 cm head and a shorter handle than a professional peel |
This table is not a ranking. It separates four buyer problems that are often mixed together: removing flour, learning to launch, serving at the table and finding somewhere for the utensil once the evening is over.
Ooni perforated 30 cm: to reduce the flour that falls onto the stone
The Ooni perforated peel product page lists an anodised-aluminium head, a glass-reinforced nylon handle and a weight of 585 g. The 30 cm version measures 65.9 × 30.5 × 3 cm. Its edge is tapered, and the openings in the head are intended to release flour and steam.
This is the model I would look at first for soft dough dusted with flour just before launching. It does not replace good technique: you still need to place the topped pizza on the peel late, check that it slides and launch without waiting. The perforations simply give some of the flour an exit before it ends up on the hot stone.
Size remains its real limitation. A head sold as 30 cm is not designed to carry a 35 or 40 cm pizza comfortably. Ooni also requires hand washing and indoor storage, and advises against prolonged exposure to high heat. A peel enters the oven for one movement; it does not stay there.
Ooni classic 30.5 cm: the solid peel for learning
The Ooni classic pizza peel uses a lightweight aluminium plate and the same kind of glass-reinforced nylon handle. The manufacturer gives dimensions of 30.5 × 66 × 3.5 cm and a weight of 530 g for the 30 cm version.
Its solid surface is easy to read when you are starting out. You can see the dough, make a small back-and-forth movement to check that it is not sticking, then launch. It can also retrieve the baked pizza. On the other hand, all the flour placed beneath the dough remains on the plate unless you shake it away.
I would recommend it to someone who prefers a straightforward tool and wants to work on their launch before adding a turning peel. I would only avoid using its surface as a preparation board for several minutes: the longer topped dough waits on a metal peel, the more opportunity it has to stick.
Ooni bamboo 30 cm: a versatile board and a more specialised peel
The Ooni bamboo peel and board measures 50.5 × 30.5 × 1.2 cm and weighs 717 g in its 30 cm version. Ooni describes it as a surface for launching, serving and cutting. The bamboo is presented as moisture-resistant.
Its appeal is obvious in a small kitchen: it can hold the dough, carry the pizza to the oven and return to the table as a board. But that versatility stops at the flame. It is thicker than the aluminium models, and the manufacturer says that it is not designed for prolonged exposure to extreme temperatures.
I therefore see it as a good launching and serving peel, not as the only peel for someone who wants to turn a pizza quickly in a very hot oven. It must be hand-washed and allowed to dry completely before storage.
Weber 6691: folding stainless steel for the cupboard
The Weber 6691 product page lists a stainless-steel peel measuring 57 × 31.5 × 4.3 cm. Its non-slip rubber handle pivots to reduce its footprint, and the whole utensil is dishwasher-safe.
That is not a minor detail. A peel more than 60 cm long quickly ends up against a wall, behind a door or in a garage. If your oven only comes out a few times a month and every accessory has to go back into a cupboard, the Weber’s folding handle solves a real problem.
The trade-off is a solid stainless-steel head and a size mostly suited to pizzas around 30 cm. I would prefer a longer handle for a large, deep oven. For a domestic oven, barbecue or stone placed near the opening, its compact size may matter more than the difference in material.
A wide peel does not always replace a turning peel
Ooni’s overview of the different types of peel distinguishes the classic or perforated peel used for launching and retrieving from the small round peel used to turn the pizza inside the oven.
You can learn to turn with a large peel by pulling the pizza slightly towards you. This requires space in front of the oven and slows the movement. A turning peel becomes useful when the bake is short, the flame colours one side faster, or several pizzas need to follow one another.
For a first set of equipment, I would nevertheless keep this order:
- a wide peel that can genuinely launch and retrieve the pizza;
- a suitable thermometer if the oven does not measure the stone;
- a turning peel once the need appears in your technique.
Buying both peels immediately is not essential. Finding yourself with a hot oven and no safe way to place the dough inside it is a different matter.
The five measurements to take before ordering
- The usable oven opening. Measure its width at the narrowest point, not just the advertised diameter of the stone.
- The actual diameter of your pizzas. A 30 cm pizza needs a head close to 30 cm; some margin beneath the dough is reassuring when launching.
- The depth of the oven. This determines a comfortable handle length.
- The space in front of the opening. You need to be able to draw the peel back without hitting a table, a wall or a guest.
- Storage. Also measure the cupboard, hook or box that will hold the tool when it is cold and clean.
Ooni’s guide to choosing a peel repeats the most useful principle: a 30 cm peel suits a 30 cm oven, while a larger oven can accept several widths. The reverse does not work. A 40 cm peel does not magically fit through a 30 cm opening.
What I would choose
For a domestic oven and pizzas around 28 to 30 cm, I would choose the Ooni perforated peel if the budget and storage allow. Its purpose is not to promise a better result; it is to remove a little flour before it burns on the stone.
I would take the Ooni classic to learn with a solid surface, the bamboo board for preparation and serving, and the Weber when every centimetre of cupboard space counts. They are four coherent answers to four different constraints. The sources do not allow us to rank them for durability, comfort or baking quality under identical conditions.
