The decision in one sentence
The Sage Pizzaiolo BPZ820 makes sense if you want to bake indoors, begin with straightforward programmes and later adjust the upper and lower heat independently. It is a specialised appliance: it needs to remain accessible on a worktop and be used often enough for that permanent footprint to make sense.
Do not buy it solely for the promise of a pizza in two minutes. Speed depends on the dough, its diameter, the toppings and the selected programme. Published measurements mainly show controlled heating, a short recovery between pizzas and a cooler area at the front of the stone. That compromise matters more than the number printed on the product page.
What Sage is actually selling
The French Pizzaiolo product page states a maximum temperature of 400 °C, a 30 cm cordierite stone and several programmes: wood-fired, thin and crispy, pan, New York and frozen pizza. These names describe settings; they prove neither a wood fire nor an identical result with every dough.
Manual mode is the useful distinction. It lets you distribute heat between the stone and the upper element instead of relying entirely on a programme. This can help correct a base that colours too quickly or toppings that need more heat. It also adds a learning phase: automatic mode is more direct, while manual mode requires an understanding of what the dough needs.
Sage gives dimensions of 46.1 × 47.2 × 27 cm. The European SPZ820 manual requires indoor installation on a stable surface with the necessary clearances. Measure the depth of the worktop, the door swing and the ventilation space before comparing programmes.
What Les Numériques measured
The Les Numériques protocol starts with a common 350 °C setting. The source measures 358 °C at the centre of the stone after 16 minutes. It records 316 °C at the front and 326 °C at the rear: the centre reaches the target, but the whole surface is not at the same temperature.
In that particular session, the pizza bakes in 3 min 32 sec. After the door is opened and the pizza baked, the stone returns to the target in 2 min 25 sec. These times help describe the pace of an evening; they do not establish a universal duration. The source does not publish a repeated series of identical doughs across several appliances.
At the maximum setting, Les Numériques waits 18 min 33 sec before measuring the stated 400 °C. The front remains at 372 °C and the rear at 390 °C. This map explains why placement and heat settings still matter in an automated oven. It does not establish that every unit has the same characteristic.
What the second source confirms — and does not measure
Good Food describes roughly twenty minutes to reach 400 °C and bakes lasting 1 min 30 sec to two minutes with the programme used for its pizza. The source uses the supplied stone, peel and pan, then highlights the convenience of the programmes and the option to take manual control of the heat.
This account supports the value of guidance and the fast pace once the oven is hot. It includes no stone map, recovery measurement or repeated series comparable to a laboratory protocol. The page contains paid links and does not disclose the origin of the unit. Its timings therefore remain tied to its dough and settings.
Space, noise and cleaning change the purchase decision
Les Numériques records 27 °C on the casing at the measured point during its 350 °C protocol. That figure does not mean the entire surface stays at this temperature throughout a session. It only indicates that, under those conditions, the monitored point was well insulated. The manual remains the authority for safety distances and ventilation.
The same source measures 47 dB in operation. Good Food also describes audible fan noise. If the oven will stay in an open-plan kitchen or near the table, this airflow belongs in the decision alongside baking speed.
Cleaning is less straightforward than the stainless-steel front suggests. The stone moves forward with the door, but the elements and areas around its support remain difficult to reach if toppings fall. The carbon-steel pan also needs appropriate drying and care. A well-floured peel reduces mishaps; it does not eliminate them.
What remains unknown
The available sources do not follow the BPZ820 over several years. They do not answer how long the elements, door mechanism or electronics last, how quickly a part can actually be obtained in France, or what a year of use costs.
There is also no independent comparison in which the Sage and a cheaper oven bake the same dough, at the same diameter and target colour, over several repetitions. Without that shared protocol, the higher price buys documented controls, construction and indoor use; it does not by itself prove a better pizza.

Who can justify the purchase
Four à Nu considers the BPZ820 coherent for someone who cannot or does not want to cook outside, regularly makes 30 cm pizzas and wants a guided process without giving up manual control. The measured recovery also makes several consecutive pizzas credible, within the limits of the published protocol.
Skip it if worktop space is already scarce, silence is a priority or you only want an occasional appliance. Put the decision on hold as well if repairability and long-term cost must be known before purchase: the current evidence does not document them.
